WFMW: Easy Brownies From Scratch



What works for me: FROM SCRATCH BROWNIES

Need a quick dessert for an impromptu summer evening gathering with the neighbors from ingredients you most likely already have in your cupboard? Try this recipe for brownies - no 5pm Saturday run to the grocery store needed.

FROM SCRATCH BROWNIES

1 stick butter, melted
1 c. sugar
1 tsp. vanilla
2 eggs
1/2 c. flour
1/3 c. cocoa
1/4 tsp. baking powder
1/4 tsp. salt
1/2 c. chopped nuts (optional)

Blend butter, sugar and vanilla in large bowl. Add eggs; beat mixture well. Combine flour, cocoa, baking powder and salt; gradually blend into egg mixture. Stir in nuts. Spread in a greased 9-inch square pan. Bake at 350 degrees for 20 to 25 minutes or until brownie begins to pull away from edges of pan. Cool, and frost with Creamy Brownie Frosting if desired (recipe below). Cut into squares and serve. Yields: about 16 brownies.

CREAMY BROWNIE FROSTING

3 tbsp. butter, softened
3 tbsp. cocoa
1 tbsp. light corn syrup or honey
1/2 tsp. vanilla1 c. confectioners' sugar
1 to 2 tbsp. milk

Cream butter, cocoa, corn syrup and vanilla in small mixer bowl. Add confectioners' sugar and milk; beat to spreading consistency.

Thanks for sharing this! I've got a get together tonight and I don't have time to go grocery shopping. I'm so glad to have come upon your blog (google is a beautiful thing)! Brownies are in the oven now - batter was yummy - I can't BELIEVE how easy it is!
